Trim and halve the Brussels sprouts
In a small bowl, whisk together balsamic vinegar, honey, mustard, salt, and pepper.
Add Brussels sprouts to slow cooker and place chicken breasts on top. Add thyme and pour the sauce over chicken. Cover and cook on high until chicken is tender, 3-4 hours. Garnish with parsley and serve.
