Make the brown rice: rinse it in a strainer under cool water. Heat 1 tbsp olive oil in a saucepan over medium-high heat, add the rice and toast until dry. Pour in the water and salt to taste. Bring to a boil, reduce heat to low and cover. Allow it to cook for about 30 minutes. Uncover and and check if the water has been absorbed and rice is tender - if not, add a little bit of more water and cook for another 5-10 minutes.
Cut the chicken into bite-size pieces.
Slice the bell peppers.
Slice the onion.
In a skillet, heat 1 tbsp olive oil over medium-high heat. Add the chicken and cook until cooked through. Salt to taste. Add in the soy sauce and honey, and cook until thickened.
Remove the chicken from the skillet, leaving the sauce. Stir in the vegetables to the same skillet and cook until softened. Add the chicken back in and remove from heat. Split the rice and vegetables evenly between containers. Sprinkle with sesame seeds.
