Pre-heat the oven to 425°F. In the meantime, finely chop the onion and parsley. Grate the parmesan cheese and the garlic.
In a large bowl, add all of the meatball ingredients and mix well to combine.
Roll the mixture into about 2” balls and place them on a baking sheet lined with parchment paper. Bake for 20 minutes or until cooked through.
Make the sauce: in a saucepan heat the olive oil over medium heat. Add the garlic and chilli flakes and cook gently for a few minutes, or until the garlic is pale gold, so the flavourings infuse the oil. Add the diced tomatoes and cook for about 5 minutes. Season with salt and pepper. Serve meatballs with the tomato sauce and freshly grated Parmesan.
