Cut the onion and mince the garlic. Slice chicken and cut into bite sized pieces.
Press sauté mode on instant pot for medium heat and add olive oil. Once heated, add in the onions and garlic and cook for 2 minutes until softened.
Add the chicken and stir for a minute until the edges become white in color, but not fully cooked. Add in the soy sauce, brown sugar and 0.5 cup water. Stir well. Secure the lid and cook at high pressure for 4 minutes. Quick release when done.
As the chicken is cooking, cut the broccoli into florets.
Once the quick release is done, uncover and select sauté mode. Add in the cornstarch slurry (cornstarch mixed with 1 tbsp water) and stir immediately.
Stir in the broccoli and allow it to cook for 3-5 minutes, until sauce is thickened and the broccoli slightly tender. Serve.
