In a medium bowl add the soy sauce, brown sugar, and paprika and whisk until everything is completely dissolved.
Chop up the onion, zucchini, bell pepper, garlic, and ginger.
In a skillet add olive oil on medium high heat and add chicken and sauce. Cook the chicken until cooked through, about 3-5 minutes on each side. Transfer the chicken to a plate and set aside.
In the same skillet add onions and saute for about a minute, until softened.
Stir in the zucchini and bell pepper. Add water and cook for 3-5 minutes, until tender crisp.
Remove from heat, add in the chicken and stir well to coat. Garnish with sesame seeds and scallions.
