Pour water into the Instant Pot and place the metal trivet on top. Place the salmon fillets, skin side down, into a single layer on the trivet. Sprinkle with salt and pepper, and cover with lemon slices.
Put lid on and set valve to sealing. Cook on Pressure Cook on high pressure for 3 minutes. Once timer goes off, quick release the pressure.
While the salmon cooks, make the dill sauce. Chop the shallot into small pieces.
In a small bowl whisk together the greek yogurt, mayonnaise, lemon juice, dill, shallot, salt, and pepper until smooth.
Serve salmon with creamy dill sauce and garnish with additional fresh dill.
